Conclusions
Quality Assessment: Very Good. Wine is still young so it will need some time to balance itself. Complex aromas and flavours coming from the fruit, Secondary and tertiary stages
Bottle Ageing: Suitable for bottle ageing. The wines has good structure and acidity to hold a few more years to reach its top quality, I would guess in 2 to 3 years. Still present more primary than secondary or tertiary aromas, which has the potential for development.
Final Remarks
Baron Longo is a great representative of the Alto Adige traditions in wine making. No compromises are made in attention to quality, to vilification and preserving the land by using only natural ways of wine growing. All this shows in the wine.Not traditional, but food companion was free range chicken, filled and covered in fermented cabbage and a few slices of guancale, and it was the best food and wine pairing ever!!!
